A Story of
Farming, Resilience, & Renewal

“This book gifts us with a mandate to think. In a TikTok world disconnected from our ecological umbilical, the mandate to think is a revolutionary imperative: to think in ways we haven’t thought about things we need to think about. In general, our ignorance is astounding. Siobhan spent three years deeply researching scientific literature for this book. Her experiences on her own farm, interactions with her own property, and participation in various earth actions accentuate the urgency of her message.”

Sun Cheese: Lessons From Regenerative Farming That Can Help You Rewrite Your Future
What if the wildfires raging across the planet can be prevented and the Earth cooled?
In Sun Cheese, environmental writer, regenerative farmer, and agricultural consultant Siobhan Griffin offers a bold, hopeful answer to the unravelling of ecosystems and climate: humanity has had the power to impact climate for 64,000 years - and now we must learn to use that power to heal it.
Drawing on thirty-five years of organic and regenerative farming, Griffin challenges the despairing story that ecological collapse is inevitable. Instead, she introduces readers to the Restoracene: a new era of restoration where deserts turning green, revived wildlife populations, clean water recharging aquifers, and people working together in their own self-interest are not utopian dreams, but practical possibilities. From the rebirth of biodiversity on her upstate New York farm to the urgent need for ocean restoration and social justice, Griffin reveals how resource management, food systems, and community autonomy are deeply connected.
Inside, readers will discover:
- Why degraded ecosystems intensify climate disruption
- How mimicking nature can reduce wildfire and flooding risk
- Why regenerative farming can rebuild soil, biodiversity, and resilience
- How people can reclaim power over their own futures
- Why ecosystem restoration offers real hope beyond technological quick fixes
Scientific, personal, and fiercely empowering, Sun Cheese invites environmentalists, farmers, activists, policymakers, and concerned citizens to see themselves as caretakers of our living planet. A useful blueprint for restoration, this book offers tools and knowledge to help readers create a cooler, more secure, greener future - one landscape, one community, and one choice at a time.
My paradigm changing
scientific posit
The biosphere is intricately linked to the atmosphere, and the realms of air and earth constantly influence each other. In Sun Cheese I introduce my novel scientific posit that humans have been changing global climate for at least 65,000 years by degrading ecosystems. How is this possible? If true, can it mean we can still have a big influence on climate by how we manage nature? Absolutely. This means everyone on Earth can help cool her by helping to restore productive ecosystems.
