Siobhan was an early adopter of organic gardening and farming, starting a small grass-based dairy farm business in Derby, Vermont in 1991. Her family bought a neglected farm in Westville, NY in 1997 and started Raindance Farm. By 2007, after a decade of long hours of hard work and stagnant prices, it was difficult to come up with enough money to pay employees so she could put due diligence into single motherhood. Holistic Management helped Siobhan Griffin  navigate the complexities of the natural grasslands feeding her cows, connect with the people the farm needed to thrive, and pay her bills on time. Bluebirds, endangered bobolinks, and Karner blue butterflies began to thrive on the farm, and the land began teaching her about its own story - past, present, and future. It was amidst this journey that Sun Cheese was born.

Raindance Farm produced certified organic raw-milk cheese, grass-fed beef, pork, and poultry products for the local farmers market in Cooperstown, NY, health food stores, a buying club, and for Greenmarkets in New York City. Her farm results that included boosting wildlife biodiversity and lifting soil carbon resonated with the global regenerative farming community and she now helps farmers master natural farm productivity as a grazing coach. Acres U.S.A. published her three-part series of articles in their June 2024, February 2025, and July 2025 issues. In 2024, she was invited as keynote speaker to the Da Byw regenerative farming conference in Wales and the Betesutbytet regenerative farming conference in Sweden where this video was recorded:
